pasta con shiitake, tomates secos y gorgonzola // pasta with siitake mushroom, sundried tomatoes and gorgonzola cheese

Pasta lovers, today I´m sharing something you will like. Yummy, oh yeah...I´d bought these mushrooms to make a risotto, but I changed my mind when I saw the sundried tomatoes and cheese. Here you are today´s recipe: pasta with shiitake mushrooms, sundried tomatoes and gorgonzola cheese.
Ingredientes (para 2) / Ingredients (makes 2 servings)
5 tazas de pasta / 5 cups of pasta
200 g shiitake fresco / 200g fresh shiitake
1 cebolla / 1 onion
2 puñados de tomates secos / 2 handful of sundried tomatoes
1/2 taza de queso gorgonzola / 1/2 cup of gorgonzola cheese
1/2 taza de vino blanco / 1/2 cup of white wine
aceite de oliva virgen extra / extra virgin olive oil
rúcula / rocket salad
sal y pimienta /salt and pepper

Rehydrate the tomatoes in hot water for about 20-30 min. Drain well and chop them in big chunks. Boil the pasta in a pan of salted water. Meanwhile, clean the mushrooms and cut them into slices. Chop the onion into strips. Put a splash of olive oil in a skillet and saute the onion. Add mushrooms and cook until tender. Add tomatoes and white wine, a pinch of salt and cook the mixture until the wine is absorbed. When pasta is al dente, drain and reserve some of the cooking water. Add diced gorgonzola cheese and mix well until you get a light texture. Add the sauce to the pasta and mix well, being careful not to tear the pasta. This is a good trick to better integrate the sauce with the pasta. Pour the pasta into the pan with the mushrooms and the rest of the ingredients and sauté. A touch of pepper, a handful of rocket salad on top and voila!

lately in my kitchen...spaghetti al pesto!

I've noticed that when preparing pasta, we usually tend to put too many ingredients, maybe cause we think it will be more flavorful. But that is until you try a good recipe of pasta with chilli and garlic or the famous pesto sauce. Since I tried them, these two recipes are my favorite when it comes to pasta, and as my little basil pot is getting so big, I decided to put it to good use ... So today, I cooked some spaghetti and I prepared this delicious sauce (caution, it´s pretty addictive).

Ingredientes / Ingredients:
15 o 20 hojas de albahaca fresca lavadas / 15-20 fresh basil leaves, washed
un puñado de piñones / a handful of pinenuts
50g de parmesano rallado / 50 g grated parmesan cheese
1/2 taza de aceite de oliva virgen extra / extra virgin olive oil
1/2 diente de ajo / garlic clove
sal /salt
pimienta negra recién molida / freshly ground black pepper

Prueba y me cuentas.
In theory, traditionally pesto should be made in a mortar, mixing the ingredients and mashing it all by hand, but I had no time and have done with a blender. And it has been great, anyway.
Once the pasta is cooked and drained, serve it with some pesto sauce on top. I love this sauce, but you need to know that it is full of flavour, so it's better not to add too much if you don´t like it to taste so intense. Try and tell.
