I know many people think that croquettes are a vulgar food, but I don´t mind, I love homemade croquettes. I guess the fact that my mother is an amazing cook has much to do with this. Whaterver ingredients she makes them of, her croquettes are always scrumptious. I don´t know how, but her croquettes are always super crispy on the outside but delicate, soft and creamy on the inside ... well, bechamel sauce and I are not great friends yet, so for me this is a big challenge. My grandmother, who knows I am crazy about these little treats, called me by phone yesterday, "Do you wanna come home and learn how I make croquettes?". Granny and I in the kitchen together making croquettes ... you shall laugh, but I thought it was the best plan ever. So, with my grandma´s permission, today we will share her recipe with you... mmm, ham&chicken homemade croquettes. PS: If you are lucky enough and still have grandparents, please, take care of them and give them love, I´m sure they deserve it. Kisses, grandma.
- 1/2 l leche
- 75g harina
- 20g mantequilla
- aceite de oliva virgen extra
- 1/2 pechuga de pollo o gallina cocida y picada
- 150g de jamón york muy picadito
- 3 huevos + 2 huevos cocidos picados
- pan rallado
- nuez moscada
- sal
Poner en una sartén grande la mantequilla y un chorro de aceite. Cuando esté caliente, añadir la harina y remover bien. Añadir poco a poco la leche, sin dejar de remover con una cuchara de palo. Super importante, REMUEVE, REMUEVE...si te salen grumos como a mi, siempre se puede usar la batidora, pero ya no es lo mismo, te lo aseguro.Si lo has removido lo suficiente, no salen grumos y queda una bechamel cremosa y con brillo: perfecta. Dale un toque de nuez moscada recién rallada. Añade la pechuga, el jamón y dos huevos cocidos bien picaditos. Remueve la mezcla y retira del fuego. Pasa la masa a una bandeja y deja enfriar. Cuando esté fría, separa trocitos de masa y dales forma. Puedes usar las manos bien limpias, no pasa nada, pero hay gente que prefiere utilizar dos cucharas. Mi abu las hace a mano ;)
Pasa las croquetas por un poco de pan rallado, huevo batido y otra vez pan rallado. Fríe las croquetas en abundante aceite bien caliente...Y listo! Cuidado con ellas, crean adicción...jaja
- 1/2 l milk
- 75g wheat flour
- 20g butter
- extra virgin olive oil
- 1/2 chicken breast (boiled and minced)
- 150g minced ham
- 3 eggs+2 boiled eggs
- breadcrumbs
- a pinch of nutmeg
- salt
In a large skillet, place butter and add a splash of olive oil. When hot, add the flour and stir well.Gradually add milk, stirring with a wooden spoon. Super important, STIR, STIR... if you get lumps like me, you can always use a blender, but it is just not the same. If you have done it properly, the bechamel sauce will be smooth, creamy and slightly bright: perfect. Add a touch of freshly grated nutmeg. Add the chicken breast, ham and two boiled eggs, the three of them minced. Stir the mixture and remove from heat. Spread the dough on a tray and let cool. When cool, separate pieces of dough and give them shape. You can do it with clean hands, that´s ok, but some people prefer to use two spoons. Granny makes it by hand ;
Coat the croquettes first with breadcrumbs, then beaten egg and breadcrumbs again. Fry the croquettes in abundant hot olive oil ... and that´s it! Be careful, they can be pretty addictive...haha
