galletas con doble chocolate y almendra / double chocolate almond cookies

Parece que últimamente sólo hago recetas dulces, pero es que las reuniones con familia y amigos lo piden. Este fin de semana hemos tenido una visita muy especial, y como había muchos niños, ha sido la excusa perfecta para probar esta receta que tenía en mente hacía un tiempo. A los niños les encantaron estas galletas, pero he de reconocer que yo tuve que resistirme para no comerme una docena de ellas :)
It seems that I´ve been making only sweet stuff lately, but these days with family and friends call for it. We had a very special visit last weekend, and there were many kids, so I had the perfect excuse to try this recipe I had in mind for quite a while. Kiddos loved these cookies, and I have to say I had to control myself not to eat a dozen :)
Ingredientes (para unas 30 galletas) / Ingredients (makes 30 cookies)
100g azúcar moreno / 100g brown sugar
100g azúcar glass / 100g powder sugar
120g mantequilla sin sal / 120g unsalted butter
180g harina de trigo / 180g all purpose flour
2 huevos M / 2 medium eggs
200g de pepitas de chocolate / 200g chocolate chips
125g almendra laminada / 125g sliced almonds
1/2 taza de leche / 1/2 cup milk
2 cucharadas cacao en polvo / 2 tbs cocoa powder
1 cucharadita de extracto de vainilla / 1 tsp vanilla extract
1/2 cucharadita de levadura / 1/2 tsp baking powder
1/2 cucharadita de sal / 1/2 tsp salt
Y así se hace.../ And here is how to...
Precalienta el horno a 170ºC y forra tres bandejas con papel de horno. En un bol, mezcla bien el azúcar y la mantequilla. Añade los huevos, la leche, la vainilla y la levadura y mezcla hasta obtener una textura homogénea. Añade la harina y la sal y mezcla. Finalmente, añade las pepitas de chocolate y la almendra laminada. Utilizando dos cucharas, haz pequeñas bolitas de masa del tamaño de una nuez y colócalas bien separadas en las bandejas. Yo suelo hacer tres filas de cuatro bolitas por bandeja para que no se peguen. Hornea unos 20-25minutos a 170ºC ¡y ya está! Cuando salen del horno pueden parecer un poquito blandas, pero engañan. Déjalas enfriar en una rejilla y verás qué ricas, estarán tiernas por dentro y algo crujientes por fuera. 
Preheat the oven at 170ºC and line three baking sheets with parchment paper. Beat the sugars and butter together. Add eggs, milk, vanilla extract and baking powder and beat until smooth. Add flour and salt and keep beating. Mix in the chocolate chips and almonds. Using two tablespoons, scoop the cookie dough into balls (the size of a walnut) and place them on the baking sheets. I use to place three lines with four dough balls each. Bake for 20-25 minutres at 170ºC, and you are done! When they come out from the oven they look too soft, but don´t worry. Let them cool on a wire rack and you´ll get delicious cookies slightly crunchy outside and soft inside.

receta de tiramisú / tiramisu recipe

La semana pasada celebramos el cumpleaños de mi madre, así que quise sorprenderla con un riquísimo postre para la comida familiar ¡tiramisú! Este es uno de mis pasteles favoritos, seguramente porque no es demasiado dulce y la mezcla de sabores y texturas es buenísima: bizcocho, café, crema de mascarpone, cacao...no me digáis que no se os hace la boca agua. Yo recomiendo hacerlo el día anterior y dejarlo reposar por la noche en la nevera para que quede perfecto. Esta receta es para unas 8 personas y como es muy sencilla, se puede preparar un recipiente grande o presentarlo así, en vasitos individuales ¡Felicidades, mamá!
Last week we celebrated my mom's birthday and I wanted to surprise her with a delicious dessert for the family meal...tiramisu! This is one of my favorite cakes, probably because it is not too sweet and the mixture of flavors and textures is great: ladyfingers, coffee, mascarpone cream, cocoa ... it makes your mouth watering. If you prepare it the day before and leave it in the fridge overnight, is way much better. This recipe makes about 8 servings and is very simple. You can prepare it in a large pyrex or in individual bowls. Happy birthday, mom!

Ingredientes / Ingredients:
300g bizcochos de soletilla (around 35) / 300g ladyfingers (around 35)
6 huevos M / 6 medium sized eggs
500g mascarpone / 500g mascarpone
60g azúcar moreno / 60g brown sugar
250 ml café intenso  / 250ml coffee
2 cucharadas de cacao / 2 tablespoons cocoa powder
Frambuesas y moras para decorar (opcional) / Raspberries and blackberries to decorate (optional)
Y así se hace... / And here´s how to...
Prepara el café, endúlzalo con algo de azúcar y déjalo enfriar. Separa las claras de las yemas. Bate las yemas con el azúcar. Añade el mascarpone y bate con las varillas eléctricas hasta obtener una mezcla esponjosa. Monta las claras a punto de nieve e incorpóralas a la preparación anterior en dos tandas con una espátula de plástico. Moja los bizcochos de uno en uno en el café, muy rápidamente para que no se deshagan. Coloca una capa de bizcochos y otra de crema encima. Repite este paso para que haya dos capas de cada. Cúbrelo con film y déjalo reposar en la nevera al menos 5 ó 6 horas (mejor si es toda la noche). A la hora de servir, espolvorea con cacao tamizado con ayuda de un colador y decora con los frutos rojos. Bon apetit!
Make the coffee, put a little sugar and let it cool. Separate the whites from the yolks. Beat the yolks with the sugar. Add the mascarpone and beat with electric mixer until you get a fluffy mix. Whip the egg whites until stiff and incorporate to the mixture in two batches with a rubber spatula. Dip the ladyfingers one at a time in the coffee, very quickly so that they do not break. Place a layer of ladyfingers and a layer of mascarpone cream on top. Repeat this step so that you have two layers of each. Cover it with plastic film and let stand in refrigerator at least 5 or 6 hours (ideally overnight). Righ before serving, sift cocoa powder on top and decorate with berries. Bon Apetit!

Muffins con doble chocolate / Double chocolate muffins

Hacía tiempo que quería probar a hacer muffins de chocolate, de esos con enormes trozos de chocolate negro que no te esperas y te sorprenden cuando les das un mordisco...mmm. Así que este es el resultado de mi último arrebato nocturno. Ah, y que conste que no son demasiado dulces, prometido.
I´ve long wanted to try to make chocolate muffins, the kind with huge chunks of dark chocolate you don´t expect and that surprise you when you take a bite ... mmm. So this is the result of my latest night rash. Oh, and they are not too sweet if you ask, promised.

Ingredientes para 8 muffins / Ingredients for 8 muffins:
100g harina integral / 100g wholewheat flour
90g azúcar moreno / 90g brown sugar
30g cacao en polvo (sin azúcar) / 30g cocoa powder (unsweetened)
3 huevos M / 3 eggs M
100g de chocolate de cobertura en trozos / 100g dark couverture chocolate
6 cucharadas de mantequilla blanda / 6 tablespoons softened butter
1 cucharadita de levadura / 1 teaspoon yeast
Precalienta el horno a 190ºC y pon unos moldes de papel en una bandeja para hornear muffins. En un bol, mezcla la harina, el cacao en polvo y la levadura. En otro, bate la mantequilla, el azúcar y los huevos. Une todos los ingredientes en un bol y mezcla bien. Añade el chocolate cortado en trozos grandes, como de un centímetro. Reparte la mezcla en los moldes y hornea unos 20-25 minutos. El último paso es tener cuidado de no quemarte la lengua, porque no vas a poder esperar a que se enfríen, te lo aseguro :)

¡Por fin! he descubierto la forma de que me queden súper crujientes las galletas. Las pocas veces que he intentado hacer galletas, seguía las recetas al pie de la letra y nada, se quedaban más blandas de lo que yo quería. Pero esta vez no! bueno, supongo que no se quedarían blandas con el tiempo, pero no me dio tiempo a comprobarlo. Hice una hornada de prueba de poco más de una docena y volaron todas en menos de 24horas. No, no me las comí todas yo...jaja
Eureka! I´ve finally found out how to make my cookies extra crunchy! Everytime I've tried to make cookies, I´ve followed the recipe to the letter but the cookies turned out softer than I wanted. But not this time! Well, I guess they would not get softer with time, but I had no time to check. I made kind of a test batch of a bit more than a dozen and they were all gone in less than 24 hours. No, I did not eat them all ... haha

So after this big success, I must share the recipe, which is mix of two or three different recipes. Here it goes.
INGREDIENTES / INGREDIENTS
(para 18 galletas / makes 18 cookies)
  • 1 taza de harina / 1 cup flour
  • 1/2 cucharadita de levadura / 1/2 teaspoon yeast
  • 1/2 cucharadita de sal / 1/2 teaspoon salt
  • 1/2 taza de mantequilla / 1/2 cup butter
  • 1 taza azúcar moreno/ 1 cup brown sugar
  • 1 huevo mediano / 1 medium sized egg
  • 1 taza de perlitas de chocolate o chocolate negro troceado / 1 cup chocolate chips or chopped dark chocolate
Y así se hacen.../And here´s how to...
En un cuenco grande, mezcla la harina, la levadura y la sal. Ablanda la mantequilla un poco en el microondas. En otro cuenco, mezcla la mantequilla con el azúcar. Añade el huevo y bate todo bien. Añade esta mezcla al primer cuenco, donde estaban los ingredientes secos, y mezcla todo. Añade el chocolate y vuelve a mezclar. Haz unas bolitas pequeñas, de unos 5cm y colócalas separadas en una bandeja de horno. Yo he puesto papel sulfurizado en la bandeja para que no se peguen. Hornea unos 30 minutos a 160-170ºC. Sí, este parece ser el truco. A mi, en 15 minutos a 175ºC como dicen todas las recetas, no me salen tan crujientes como me gusta. Listo! Pruébalas y no podrás parar :)
In a large bowl, mix the flour, yeast and salt. Put the butter in the microwave for some seconds to soften it. In a second bowl, mix the butter with the sugar. Add an egg and beat the mixture. Place this mixture in the first bowl, where the dry ingredients, and mix it. Add the chocolate chips and mix it again. Make 5cm balls with the dough and place them separated on a baking pan. Bake them for 30 minutes at 160-170ºC. Yes, this seems to be the trick. I´ve never cookies this crunchy in 15 minutes at 175ºC as many recipes say. Done! Try them and you will not stop :)
