No puedo evitarlo.

I can´t help myself. At least once a week, usually on sundays, for breakfast, I throw some fruit in my mixer (my fave Xmas present) and make smoothies. They are delicious, super-easy and very nutritious. A good idea to compensate so much chocolate...mmmm...chocolate...chocolate smoothie!? I´m sure i´ll try that one soon, I just remembered a Belgian chocolate ice cream tub I have in the freezer...ahah. Well, this time I had some kiwis, a couple of ripe bananas and the mint in my window was doing pretty well, so it was clear...kiwi and mint: surprisingly tropical and refreshing.

Ingredients for 2 large smoothies:
2 kiwis, 2 ripe bananas, 1 glass of liquid fruit yogurt (I´ve used pineapple coconut flavour for a really tropical flavour), 6-8 ice cubes, 12-14 fresh mint leaves.
Put all the ingredients in your mixer, and you are done!

It´s always been said that we should follow a varied diet, and I 100% agree. But when it comes to breakfast, don´t you feel lazy about thinking what to eat? Nearly a year ago I made the firm intention to vary a little more in my breakfast. So besides including fresh fruit or freshly squeezed juice everyday, and my white coffee, I have toasts with olive oil or jam, cereals, porridge or pastries ... but only homemade pastries, no industrial stuff over here. And on Sunday morning, when I have plenty of time, I could cook pancakes or even scrambled eggs with ham. With the excuse, I eat better and I'm trying new things in the kitchen. Two birds with one stone. One of the last cakes I have prepared for breakfast is this one, pear and vanilla happines... A total success.

Ingredientes / Ingredients
1 yogur de frutas, mejor si es de pera (una vez vacío, utilizadlo como unidad de medida para la harina, el azúcar y el aceite) / 1 pear yogurt (once empty, use it as a measure unit for flour, sugar and oil)
3 medidas de harina integral / 3 parts of wholewheat flour (measured with the yogurt container)
1 1/2 medida de de azúcar moreno / 1 1/2 parts of brown sugar (measured with the yogurt container)
1 medida de aceite de oliva virgen extra / 1 part of extra virgin olive oil
3 huevos M / 3 medium eggs
1 cucharadita de levadura /1 teaspoon baking powder
2 peras / 2 pears
Y así se hace.../ And here is how to...
Hornea a 175ºC unos 30 minutos. Y ya está. A desayunar!
Peal and slice the pear and put it in a bowl with a teaspoon of brown sugar and a teaspoon of cinnamon. Mix and let it aside while you prepare the cake batter. In a second bowl, put the yogurt, eggs, sugar and olive oil and beat the mix. In another bowl, shift the flour and baking powder. Mix the dry ingredients with the previous yogurt mix and keep beating until you get a smooth texture. Put the batter in a mould and arrange pear slices on top. Bake at 175ºC for about 30 minutes. And ready for breakfast!

I´ve long wanted to try to make chocolate muffins, the kind with huge chunks of dark chocolate you don´t expect and that surprise you when you take a bite ... mmm. So this is the result of my latest night rash. Oh, and they are not too sweet if you ask, promised.

Ingredientes para 8 muffins / Ingredients for 8 muffins:
100g harina integral / 100g wholewheat flour
Preheat the oven to 190 ° C and place paper cups in a muffin baking pan. In a bowl, mix the flour, cocoa powder and yeast. In another one, beat the butter, sugar and eggs. Mix all ingredients in a bowl and beat again. Add the dark chocolate chopped in big chunks. Divide the mixture into the paper cups and bake for 20-25 minutes. The last step is to be careful not to burn yourself , because you will not be able to wait for them to cool down, trust me:)

How are your holidays going? These weeks are excessive in every way, we go out and have drinks more than usual, and we eat way too much, for sure. And what? I´ve decided to enjoy my family time and not to worry about it until Epiphany Day, and yes, that includes not thinking about my jeans size. So, I made a cake for Chistmas Day´s breakfast, ha! Here´s the recipe: orange and poppy seeds cake.
Ingredientes / Ingredients:
1 yogur (yo utilicé de macedonia) / 1 yogurt ( I used a fruit flavoured one)
1 taza de azúcar moreno / 1 cup brown sugar
2 tazas de harina / 2 cups flour
1/2 taza de aceite de oliva virgen extra / 1/2 cup extra virgin olive oil
3 huevos medianos / 3 medium sized eggs
15g levadura / 15g yeast
Y así se hace / And here´s how to...
Mix the dry ingredients, except the poppy seeds and orange zest in a bowl and the rest of the ingredients in another bowl. Pour the two mixtures in one bowl and whisk. Add poppy seeds and orange zest and beat again. Pour the mixture into a greased baking mould. I used one about 12x22cm with a little olive oil. Bake for about 25 minutes to 180ºC. For me, baking time is approximate, but I think the best thing you can do is to go checking with a toothpick. When it comes out clean, your cake is done!
Pruébalo y disfruta de un delicioso desayuno!
Try it and enjoy this delicious breakfast!

galletas de avena y almendra // oats and almond cookies

I don´t consider myself a sweet-toothed person but it is true that I have been baking a lot lately, cookies, cakes, muffins ... nothing too complicated. I like keeping it simple. A few weeks ago I shared a recipe for chocolate chip cookies and today it´s also about cookies, but this time, a healthier vesion, with oats and almonds and less sugar (don´t mind the powdered sugar and the tiny stars).

Ingredientes / Ingredients:
1/2 taza harina integral / 1/2 cup wholemeal flour
1/2 taza harina de trigo / 1/2 cup wheat flour
1/2 taza almendra picada /1/2 cup chopped almonds
1/2 taza avena / 1/2 cup oats
1/3 taza azúcar moreno / 1/3 cup brown sugar
1/3 taza aceite de oliva / 1/3 cup olive oil
1 huevo grande / 1 large egg
1 cucharadita levadura / 1 tsp yeast
azúcar glass y estrellitas para decorar / powdered sugar and sprinkles to decorate

Y así se hacen... / and here is how to...
Preheat the oven to 200 ° C and place a sheet of parchment paper on a baking pan. In a bowl, mix the flour and yeast. In a second bowl, mix the egg, sugar and oil. Add the flour mixture and after, the almonds and oats. Make dough balls of about 4-5 cm and place them on the tray. Sprinkle some cookies with stars and bake 15-20 minutes at 180 ° C or until cookies are golden brown. Sprinkle with icing sugar cookies you have not decorated with stars... and you are done!

sunday breakfast: apple pancakes with banana and raspberries

This week I made my special sunday breakfast on thursday but I didn´t share it here in the blog... And that is not ok, cause they were sooo good..so here is the recipe: apple pancakes with banana and raspberries.

Ingredientes (para unas 8 tortitas)/ Ingredients (makes 8 pancakes):
1 taza de harina/ 1 cup flour
3/4 taza de leche/ 3/4 cup milk
1 huevo/ 1 egg
1 manzana/ 1 apple
1/2 cucharadita de levadura/ 1/2 teaspoon baking powder
1 cucharada de azúcar/ 1 tablespoon sugar
1 pizca de sal/ 1 pinch salt
1/2 cucharada de mantequilla/ 1/2 tablespoon butter
1 plátano/ 1 banana
1 puñado de frambuesas/ a handful of raspberries
azúcar glass/ powdered sugar

Y así se hacen/ And here´s how to...
In a jug, add milk, egg, sugar, flour, yeast, salt and apple (grated or chopped) and beat with a hand mixer. Put the butter in a pan and melt it. Once the pan is hot, pour some of the mixture until it forms a circle about 10-12cm in diameter. When it starts making bubles, flip the pancake and cook until golden brown. Keep it on a plate and cover it with a clean kitchen towel to keep them warm. Repeat until you finish off the mixture.
Serve the pancakes on a plate, sprinkle with powdered sugar and put some raspberries, banana or other fruit of your choice and ... bon appetit!

sunday breakfast! super-easy english scones

At last an entire morning for baking, drinking coffee, relaxing ... and blogging! And since it's Sunday, I´ve prepared a little special breakfast, so I've baked some English scones with raisins. They are very easy to make and does not have sugar, so there is no excuse not to try. I have compensated for the lack of sugar filling them with dulce de leche and homemade kiwi jam...haha (thanks, Mom, it's so good!).

Ingredientes / Ingredients:
250g harina integral / 250g whole wheat flour
150ml leche / 150ml milk
40g mantequilla /40g butter
15g levadura (1 sobre) / 15g yeast
1 pizca de sal / a pinch of salt
un puñado de pasas / a handful of raisins
1 huevo / 1 egg

Y así se hacen / And here is how to...

Preheat the oven at 200 º C. In a large bowl, mix the sifted flour, baking powder and salt. Add the butter, softened and diced, and mix it all by hand. Add the milk and then continue mixing. Do not worry if at first it is very sticky, as you work the dough it gets uniform. Add the raisins and mix (by hand). When the dough is smooth, make small balls (about 5cm) and place them on a sheet of parchment paper placed on a baking pan. Paint the balls with beaten egg and bake them at 180ºC for about 20 minutes or until the scones are golden ... and you are done!
Feliz domingo y gracias por pasarte! Happy sunday and thanks for reading!

chocolate chip cookies

Eureka! I´ve finally found out how to make my cookies extra crunchy! Everytime I've tried to make cookies, I´ve followed the recipe to the letter but the cookies turned out softer than I wanted. But not this time! Well, I guess they would not get softer with time, but I had no time to check. I made kind of a test batch of a bit more than a dozen and they were all gone in less than 24 hours. No, I did not eat them all ... haha

So after this big success, I must share the recipe, which is mix of two or three different recipes. Here it goes.
INGREDIENTES / INGREDIENTS
(para 18 galletas / makes 18 cookies)
  • 1 taza de harina / 1 cup flour
  • 1/2 cucharadita de levadura / 1/2 teaspoon yeast
  • 1/2 cucharadita de sal / 1/2 teaspoon salt
  • 1/2 taza de mantequilla / 1/2 cup butter
  • 1 taza azúcar moreno/ 1 cup brown sugar
  • 1 huevo mediano / 1 medium sized egg
  • 1 taza de perlitas de chocolate o chocolate negro troceado / 1 cup chocolate chips or chopped dark chocolate
Y así se hacen.../And here´s how to...
Hornea unos 30 minutos a 160-170ºC. Listo! Pruébalas y no podrás parar :)
In a large bowl, mix the flour, yeast and salt. Put the butter in the microwave for some seconds to soften it. In a second bowl, mix the butter with the sugar. Add an egg and beat the mixture. Place this mixture in the first bowl, where the dry ingredients, and mix it. Add the chocolate chips and mix it again. Make 5cm balls with the dough and place them separated on a baking pan. Bake them for 30 minutes at 160-170ºC. Yes, this seems to be the trick. I´ve never cookies this crunchy in 15 minutes at 175ºC as many recipes say. Done! Try them and you will not stop :)

lately in my kitchen...veggie samosas with yogurt-mustard-chives dip

Improvisando.
I´ve just had a look at the blog and realized that this is starting to look like an international food festival. And today, samosas. If you you are not familiar with this dish, samosas are triangular pastries stuffed with veggies, meat or othe ingredients, that are usually served with some kind of chutney. They are made with brick dough sheets, that you can make yourself but I´ve actually bought mine ready made this time. Since my chives were so big already, I´ve made a yummy dip with some yogurt, mustard and lots of fresh chives instead of serving samosas with chutney.

Ingredientes/ Ingredients
1 patata grande cortada en daditos/1 big potato, diced
1 1/2 taza de guisantes congelados pequeños/ 1 1/2 cup frozen small peas
1 cebolla morada grande/ 1 big purple onion
el zumo de un limón / the juice of 1 lemon
10 hojas de masa brick / 10 brick dough sheets
1 cucharadita de curry/ 1 teaspoon curry
1 cucharadita de garam masala / 1 teaspoon garam masala
sal/ salt
aceite de oliva virgen extra / extra virgin olive oil
Y así se hacen / And here´s how to...
Perfectas.
Cook the potato and peas in boiling water. Drain and reserve. Chop the onion and saute in a pan with a little olive oil. Add the potatoes and peas and cook at medium-low heat. Add the lemon juice and once it is absorbed, add the spices and season with salt. Mix well and let it cool. Then, fold a brick dough sheet in half,  place two tablespoons of the mixture at one end and keep folding the dough until you get a triangle shape. Make sure it is securely closed or it will be a disaster when you fry it! In this case, I did not want to fry them because I didn´t want them too oily, so I've oven baked the samosas until golden brown. They turned out crunchy and delicate outside and tender and rich inside. Perfection.

¿Te animas a probarlas?
Do you dare to try them?

cherry banana smoothie recipe

Y hoy, tocaba súper-sano. Estos días me he encontrado algo cansada, así que esta mañana me he preparado un tentempié súper nutritivo y lleno de antioxidantes, para recargar pilas.
I think I´ve commented this before: I love food. I guess I´m not the only one who dies for a hamburger with fries from time to time but in general, I make sure we eat healthy at home. And today it was super-healthy. I´ve been feeling a bit tired these days, so this morning I made myself a super-nutritious and boost with antioxidants snack, to recharge batteries.

Ingredientes / Ingredients
1 yogur natural / 1 plain yogurt

Probad y me contáis.
And here´s how to...
Mix all the ingredients in a food processor until you get a smooth-ie texture...and serve! yeah, that´s it! If you have a sweet tooth, you can add some sugar or honey, but I like sour flavours...Eating healthy doesn´t mean eating boring food, does it? Try and tell.

lately in my kitchen...hummus!

Sencillo y delicioso.
The first time I made hummus, three or four years ago, it was kind of an experiment for a party and since then it is one of our favorites snacks at home. As I´ve been asked a few times about the recipe, and it is so very easy, I thought it was time to share it on the blog. Hummus is a chickpea spread that you can serve cold, and is soooo good with toasts or crudités (those little sticks made of carrot, celery or other vegetables for dipping). Today, I´ve served it with warm pita bread. Simple and delicious.
 Ingredientes:
1. 400g garbanzos cocidos y escurridos / boiled chickpeas (drained)
2. zumo de 1/2limón / the juice of half lemon
6. comino molido / ground cumin
Put all the ingredients in a bowl and mix them with a food processor. Taste it and add more salt, spices or wathever you feel like, that´s up to you. If you like a lighter texture, add some water and mix it. The quantities I´ve tell you are for guidance, but I actually make it at a guess and then I add more lemon, salt...cooking is not an exact science, ahah! When serving, put some hummus on a plate or bowl and top it with a splash of olive oil, oregano, paprika and sesame seeds. Serve it with bread, crudités, crisps or whatever you want...and enjoy!

¿Lo habías probado antes? ¡Para mí fue todo un descubrimiento!
Had you ever tried it? It was such a discovery for me! ;)
