arroz con leche (de soja) / soy milk rice pudding recipe

¡Casi me olvido de compartir mi último experimento culinario! Con las vacaciones por medio, me he relajado demasiado...No, es broma. Nunca es demasiado. 
Aún no me explico cómo no había probado nunca a hacer arroz con leche. Bueno, la verdad es que sí me lo explico, me gusta tanto que me comería un kilo yo solita. Hasta el momento, nadie ha superado el arroz con leche de mi abuela, pero yo he hecho un intento. Lo de la leche de soja, no es que sea súper fan, ni mucho menos, pero me han puesto una dieta que no me deja tomar lácteos y había que buscar una alternativa. Pero esa es otra historia. 
A lo que iba, resultado altamente satisfactorio, aunque con algo más de azúcar y leche de la auténtica, fijo que le podría hacer la competencia a mi abuela (ahí igual me he pasado, jaja).
I almost forgot to share my latest culinary experiment! My vacation made me relax too much...just kidding. You can never relax too much. 
I still don´t understand how I could never tried making rice pudding. Well, I guess I do understand. I like it so much I could eat a kilo all by my own. So far, no one has beaten my grandma´s rice pudding, but I have made an attempt. To be honest, I´m not a big fan of soy milk, but I´m following a dairy free diet and I had to find an alternative. But that's another story.
As I was saying, we got highly satisfactory results. I´m sure with a little more sugar and whole milk, I could compete with my grandma (keep dreaming, haha).
Ingredientes (para 6 raciones) / Ingredients (makes 6 servings)
1 taza de arroz bomba / 1 cup short grain rice
1 litro de leche de soja / 1liter soy milk
3-4 cucharadas soperas de azúcar integral de caña / 3-4 tablespoons whole sugar
1 palito de canela / 1 cinnamon stick
canela en polvo / powdered cinnamon
un trozo de corteza de limón (sin la parte blanca) / a piece of lemon peel (white part removed)
1/2 cucharadita de extracto de vainilla / 1/2 teaspoon vanilla extract
Y así se hace / And here is how to...
En una cazuela, pon la leche y el arroz y sube el fuego. Remueve. Cuando esté a punto de hervir, añade el azúcar, el palito de canela, la corteza de limón y el extracto de vainilla. Baja a fuego medio y cuece la mezcla removiendo con frecuencia durante 15-20 minutos o hasta que el arroz esté blandito. Y ya está. Yo lo he servido en estos vasitos de barro, con un poco de canela en polvo y un palito de canela.

In a pan, put the rice and milk and heat it up. Stir. When the mix is about to boil, add sugar, the cinnamon stick, some lemon peel and vanilla extract. Reduce to medium heat and cook the mix (while stirring frequently) for 15-20 minutes or until the rice is tender. And you are done! I´ve served my rice pudding in these ceramic cups, topped with powdered cinnamon and a cinnamon stick.

receta de coulis de cerezas / cherry coulis recipe


Después de la mañana que pasamos cogiendo cerezas, mi cabeza sólo pensaba en smoothies fresquitos, tartas de cerezas y la mermelada de mi madre. Cuando llegué a casa, pensé que sería buena idea hacer algo con ellas que se pudiese conservar un tiempo (en el congelador, en este caso) para cuando ya no estén en temporada. La elección fue este coulis de cerezas, muy sencillo de hacer y muy rico.Yo no soy especialmente golosa y me encantan los sabores ácidos, por lo que no puse demasiada azúcar, pero si lo eres, añade la cantidad de azúcar que te pida el cuerpo, seguro que estará rico igual :)
After we spent that morning picking cherries, I couldn´t stop thinking about fresh smoothies, cherry pies and my mom´s homemade jam. When I got home, I thought it would be good to do something with those delicious cherries to be kept (frozen) fot when they are out of season. And cherry coulis was my choice, very easy to make and so yummy. I don´t really have a sweet tooth and I love sour flavors, so I did not put too much sugar in my coulis, but you can add the amount of sugar you prefer and it will be also good :)

Ingredientes / Ingredients
1. 1kg de cerezas frescas / 1kg freshly picked cherries
2. 3 cucharadas de azúcar moreno / 3 tablespoons brown sugar
3. el zumo de medio limón / the juice of half a lemon
4. el zumo de una lima / the juice of one lime

Y así se hace / And this is how to...
Lava y retira el hueso de las cerezas. Esta parte es un poco laboriosa, pero merece la pena, te lo aseguro. En una cazuela a fuego medio, pon el zumo de limón y lima y las cerezas despepitadas. Añade el azúcar y cuece la mezcla hasta que las cerezas estén muy blanditas, removiendo con frecuencia. Yo tardé aproximadamente 40 minutos. Retira del fuego y bate con la batidora de mano hasta que quede una mezcla homogénea. Deja enfriar ¡y listo! Yo lo he repartido en botes de cristal de diferentes tamaños y los he congelado, así tengo la salsa lista para acompañar una tarta de queso, una copa de helado o como ingrediente en smoothies o batidos como este.
Wash and pit the cherries. This part is a bit laborious, but trust me, is so worth it. In a saucepan over medium heat, place the lemon and lime juice and the pitted cherries. Add brown sugar and cook the mixture until the cherries are very soft, stirring frequently. this took me about 40 minutes. Remove from heat and blend with an electric mixer until you get an homogeous puree. Let it cool and you are done! I've distributed the sauce in glass jars of different sizes and have frozen it so it´s ready to serve with some cheese cake, ice cream sundae or as an ingredient in milkshakes or smoothies like this one.

receta de tiramisú / tiramisu recipe

La semana pasada celebramos el cumpleaños de mi madre, así que quise sorprenderla con un riquísimo postre para la comida familiar ¡tiramisú! Este es uno de mis pasteles favoritos, seguramente porque no es demasiado dulce y la mezcla de sabores y texturas es buenísima: bizcocho, café, crema de mascarpone, cacao...no me digáis que no se os hace la boca agua. Yo recomiendo hacerlo el día anterior y dejarlo reposar por la noche en la nevera para que quede perfecto. Esta receta es para unas 8 personas y como es muy sencilla, se puede preparar un recipiente grande o presentarlo así, en vasitos individuales ¡Felicidades, mamá!
Last week we celebrated my mom's birthday and I wanted to surprise her with a delicious dessert for the family meal...tiramisu! This is one of my favorite cakes, probably because it is not too sweet and the mixture of flavors and textures is great: ladyfingers, coffee, mascarpone cream, cocoa ... it makes your mouth watering. If you prepare it the day before and leave it in the fridge overnight, is way much better. This recipe makes about 8 servings and is very simple. You can prepare it in a large pyrex or in individual bowls. Happy birthday, mom!

Ingredientes / Ingredients:
300g bizcochos de soletilla (around 35) / 300g ladyfingers (around 35)
6 huevos M / 6 medium sized eggs
500g mascarpone / 500g mascarpone
60g azúcar moreno / 60g brown sugar
250 ml café intenso  / 250ml coffee
2 cucharadas de cacao / 2 tablespoons cocoa powder
Frambuesas y moras para decorar (opcional) / Raspberries and blackberries to decorate (optional)
Y así se hace... / And here´s how to...
Prepara el café, endúlzalo con algo de azúcar y déjalo enfriar. Separa las claras de las yemas. Bate las yemas con el azúcar. Añade el mascarpone y bate con las varillas eléctricas hasta obtener una mezcla esponjosa. Monta las claras a punto de nieve e incorpóralas a la preparación anterior en dos tandas con una espátula de plástico. Moja los bizcochos de uno en uno en el café, muy rápidamente para que no se deshagan. Coloca una capa de bizcochos y otra de crema encima. Repite este paso para que haya dos capas de cada. Cúbrelo con film y déjalo reposar en la nevera al menos 5 ó 6 horas (mejor si es toda la noche). A la hora de servir, espolvorea con cacao tamizado con ayuda de un colador y decora con los frutos rojos. Bon apetit!
Make the coffee, put a little sugar and let it cool. Separate the whites from the yolks. Beat the yolks with the sugar. Add the mascarpone and beat with electric mixer until you get a fluffy mix. Whip the egg whites until stiff and incorporate to the mixture in two batches with a rubber spatula. Dip the ladyfingers one at a time in the coffee, very quickly so that they do not break. Place a layer of ladyfingers and a layer of mascarpone cream on top. Repeat this step so that you have two layers of each. Cover it with plastic film and let stand in refrigerator at least 5 or 6 hours (ideally overnight). Righ before serving, sift cocoa powder on top and decorate with berries. Bon Apetit!

orange mango smoothie / smoothie de mango y naranja

No sé si los Reyes Magos estarán muy acostumbrados, pero esta es mi carta de agradecimiento por lo bien que se portaron estas Navidades...jaja ¡La batidora de vaso que me trajeron echa humo! Me encanta, estoy tan enganchada a los smoothies que creo que a este paso necesitaré terapia. Por el momento no he probado con los smoothies verdes, esos que llevan verduras, ni los de chocolate y helado. Soy clásica, sólo frutas. Hoy quería compartir el perfecto smoothie para un desayuno de domingo.
I guess the three Magic Kings are not very used to this, but this is my thank you card for my Christmas present... haha the blender they got me is great ! I love it, I'm so hooked on smoothies that I think I will need therapy. So far I have not tried green smoothies, those with vegetables neither the chocolate and ice cream ones. I'm classic, only fruits. Today I wanted to share the perfect smoothie for Sunday breakfast.

Ingredientes (para 4 personas) / Ingredients (makes 4 servings):
2 naranjas / 2 oranges
1 mango / 1 mango
1 puñado de frambuesas / 1 handful of raspberries
5 cubitos de hielo / 5 ice cubes
1/2 glass of water / 1/2 glass of water
Y casi no hace falta explicar cómo se hace ¿no? Las naranja y el mango lavados, pelados y cortados, y el resto de ingredientes, a la batidora... y listo! Si tienes unas hojitas de menta fresca o has reservado unas frambuesas, puedes ponerlos encima para decorar.  Ah! el smoothie de cereza y plátano, para el veranito, también es muy rico. And you can guess how to make, can´t you? Peel and chop oranges and mango, put them in the blender with the other ingredients...and you are done! If you have some fresh mint leaves or some more raspberries, you can put them on the top to decorate. Oh! and the cherry banana smoothie is so good for summertime. Bizcocho de pera y vainilla / Pear & vanilla cake

Siempre se ha dicho que es recomendable seguir una dieta variada, y yo estoy 100% de acuerdo. Pero, ¿a que a la hora de desayunar da como pereza pensar en qué comer? Hace ya casi un año que hice el firme propósito de variar un poco más en mis desayunos, así que, además de incluir fruta fresca o zumo recién exprimido cada día, y el café con leche, que es sagrado, voy alternando pan tostado con aceite o mermelada, cereales, porridge o bollería...eso sí, casera, nada de bollos industriales. Y los domingos, con más tiempo, pueden ser lo mismo unas tortitas que unos huevos revueltos con jamón. Con la excusa, me alimento mejor y voy probando cosas nuevas en la cocina. Dos pájaros de un tiro. Uno de los últimos bizcochos que he preparado para desayunar ha sido este de pera y vainilla. Todo un éxito.
It´s always been said that we should follow a varied diet, and I 100% agree. But when it comes to breakfast, don´t you feel lazy about thinking what to eat? Nearly a year ago I made the firm intention to vary a little more in my breakfast. So besides including fresh fruit or freshly squeezed juice everyday, and my white coffee, I have toasts with olive oil or jam, cereals, porridge or pastries ... but only homemade pastries, no industrial stuff over here. And on Sunday morning, when I have plenty of time, I could cook pancakes or even scrambled eggs with ham. With the excuse, I eat better and I'm trying new things in the kitchen. Two birds with one stone. One of the last cakes I have prepared for breakfast is this one, pear and vanilla happines... A total success.

Ingredientes / Ingredients
1 yogur de frutas, mejor si es de pera (una vez vacío, utilizadlo como unidad de medida para la harina, el azúcar y el aceite) / 1 pear yogurt (once empty, use it as a measure unit for flour, sugar and oil)
3 medidas de harina integral / 3 parts of wholewheat flour (measured with the yogurt container)
1 1/2 medida de de azúcar moreno / 1 1/2 parts of brown sugar (measured with the yogurt container)
1 medida de aceite de oliva virgen extra / 1 part of extra virgin olive oil
3 huevos M / 3 medium eggs
1 cucharadita de levadura /1 teaspoon baking powder
2 peras / 2 pears
1 cucharadita de esencia de vainilla / 1 teaspoon vanilla extract
1 cucharadita de canela en polvo / 1 teaspoon powdered cinnamon
1 cucharadita de azúcar moreno / 1 teaspoon brown sugar
Y así se hace.../ And here is how to...
Pela y lamina la pera y colócala en un cuenco con una cucharadita de azúcar moreno y otra de canela. Mezcla y deja reposar mientras preparas la masa para el bizcocho. En otro cuenco, pon el yogur, los huevos, el azúcar y el aceite y bate todo. En un tercer cuenco, tamiza la harina y la levadura. Mezcla estos ingredientes secos con la mezcla del yogur y bate hasta obtener una textura homogénea. Vuelca la mezcla sobre un molde y coloca los trozos de pera encima. Hornea a 175ºC unos 30 minutos. Y ya está. A desayunar!
Peal and slice the pear and put it in a bowl with a teaspoon of brown sugar and a teaspoon of cinnamon. Mix and let it aside while you prepare the cake batter. In a second bowl, put the yogurt, eggs, sugar and olive oil and beat the mix. In another bowl, shift the flour and baking powder. Mix the dry ingredients with the previous yogurt mix and keep beating until you get a smooth texture. Put the batter in a mould and arrange pear slices on top. Bake at 175ºC for about 30 minutes. And ready for breakfast!

sunday breakfast: apple pancakes with banana and raspberries

Esta semana hice el desayuno especial de domingo el jueves, pero aún no lo había compartido aquí en el blog. Y eso no puede ser, porque estaban espectaculares...así que ahí va la receta: tortitas de manzana con frambuesas y plátano.
This week I made my special sunday breakfast on thursday but I didn´t share it here in the blog... And that is not ok, cause they were sooo good..so here is the recipe: apple pancakes with banana and raspberries.

Ingredientes (para unas 8 tortitas)/ Ingredients (makes 8 pancakes):
1 taza de harina/ 1 cup flour
3/4 taza de leche/ 3/4 cup milk
1 huevo/ 1 egg
1 manzana/ 1 apple
1/2 cucharadita de levadura/ 1/2 teaspoon baking powder
1 cucharada de azúcar/ 1 tablespoon sugar
1 pizca de sal/ 1 pinch salt
1/2 cucharada de mantequilla/ 1/2 tablespoon butter
1 plátano/ 1 banana
1 puñado de frambuesas/ a handful of raspberries
azúcar glass/ powdered sugar

Y así se hacen/ And here´s how to...
En una jarra pon la leche, el huevo, el azúcar, la harina, la levadura, la sal y la manzana (rallada o en trozos) y bate todo bien con la batidora eléctrica. Pon la mantequilla en una sartén y derrítela. Una vez esté caliente la sartén, vierte un poco de la mezcla hasta que forme un círculo de unos 10-12cm de diámetro. Cuando empiece a hacer pompitas, voltea la tortita. Cocínala por el otro lado y sácala a un plato. Cubre el plato con un paño de cocina limpio para que no se enfríe. Repite la operación hasta que se acabe la mezcla.
Sirve en un plato las tortitas, espolvorea con azúcar glass y acompáñalas con frambuesas, plátano o la fruta que prefieras y...bon appetit!
In a jug, add milk, egg, sugar, flour, yeast, salt and apple (grated or chopped) and beat with a hand mixer. Put the butter in a pan and melt it. Once the pan is hot, pour some of the mixture until it forms a circle about 10-12cm in diameter. When it starts making bubles, flip the pancake and cook until golden brown. Keep it on a plate and cover it with a clean kitchen towel to keep them warm. Repeat until you finish off the mixture.
Serve the pancakes on a plate, sprinkle with powdered sugar and put some raspberries, banana or other fruit of your choice and ... bon appetit!

cherry banana smoothie recipe

 Ya lo había comentado, creo, lo de que me encanta comer. Supongo que como todo el mundo, tengo días de esos que te mueres por una hamburguesa con patatas fritas pero, en general, me preocupo bastante de que en casa se coma sano. Y hoy, tocaba súper-sano. Estos días me he encontrado algo cansada, así que esta mañana me he preparado un tentempié súper nutritivo y lleno de antioxidantes, para recargar pilas.
I think I´ve commented this before: I love food. I guess I´m not the only one who dies for a hamburger with fries from time to time but in general, I make sure we eat healthy at home. And today it was super-healthy. I´ve been feeling a bit tired these days, so this morning I made myself a super-nutritious and boost with antioxidants snack, to recharge batteries.


Ingredientes / Ingredients
1 taza de cerezas lavadas, sin hueso ni rabitos / 1 cup washed and pitted cherries
1/2 plátano / 1/2 banana
1 yogur natural / 1 plain yogurt
4 cubitos de hielo / 4 ice cubes

Y así se hace
Mezcla todos los ingredientes y bate con una batidora eléctrica hasta obtener una textura suave... y sirve! sí, ya está! Si eres muy goloso puedes poner algo de azúcar o miel, pero a mi me gustan los sabores algo ácidos...Comer sano, no significa tener que comer cosas aburridas ¿no? Probad y me contáis.
And here´s how to...
Mix all the ingredients in a food processor until you get a smooth-ie texture...and serve! yeah, that´s it! If you have a sweet tooth, you can add some sugar or honey, but I like sour flavours...Eating healthy doesn´t mean eating boring food, does it? Try and tell.

lately in my kitchen...banana hazelnut muffins

Esta mañana me he levantado con ganas de un desayuno un poco especial, y estos pequeñines son el resultado: muffins de plátano y avellana. Perfectos para mojar en un tazón de café con leche o chocolate, y muy, muy ricos. He adaptado la receta de un librito que me compré en una feria del libro hace cuatro años "Muffins y otros pastelitos". Aún no tengo muy claro qué es lo que hace diferentes a los muffins, los cupcakes y nuestras magdalenas, así que me pondré a investigar y espero tener una explicación para la siguiente hornada...
I´ve woken up today feeling like having a special breakfast, so these little guys is what I came up with: banana hazelnut muffins. They´re perfect for dipping in white coffee or hot cocoa, an soooo good. I´ve adapted the recipe from a book I bought in a book fair four years ago "Muffins and other pastries" (sorry, I don´t know its original name). I´m not sure about the differences between muffins, cupcakes and our magdalenas yet, so I will try to find out and have an answer by the next batch...
INGREDIENTES (para 12 muffins):
225g harina (mitad refinada, mitad integral), 2 plátanos maduros, 2 huevos, 50g avellanas 2 cucharaditas de levadura, una pizca de sal, una pizca de pimienta negra recién molida, 4 cucharadas de azúcar moreno, 2 cucharadas de miel, 4 cucharadas de leche.
Y así se hacen...
En un molde para 12, coloca un molde de papel en cada hueco. En un bol grande, tamiza y mezcla la harina, la levadura, el azúcar, la sal y la pimienta. Precalienta el horno a 200ºC. En otro bol, bate los huevos, añade el plátano en trozos y cháfalo con un tenedor. Añade la leche y la miel y mezcla. Vierte esta mezcla en el bol de los ingredientes secos y remueve con el tenedor. No hace falta remover demasiado, mejor que queden grumos. Reparte la masa en los moldes, coloca las avellanas encima y hornea unos 20 minutos o hasta que suban y estén doraditos.
¡Y ya está!

INGREDIENTS (makes 12 muffins):
225g flour (half wheat, half whole flour), 2 ripe bananas, 2 eggs, 50g hazelnuts, 2teaspoons yeast, a pinch of salt, a pinch of freshly ground black pepper, 4tablespoons brown sugar, 2 tablespoons honey, 4 tablespoons milk.
And this is how to...
In a mold for 12 muffins, place a paper mold in each hole. In a large bowl, sift and mix flour, yeast, sugar, salt and pepper. Preheat oven to 200 ° C. In another bowl, beat the eggs and then add the bananas cut in pieces and mash them with a fork. Add milk, honey and mix. Pour this mixture into the bowl with the dry ingredients and stir with a fork. It is not necesary to mix it perfectly, it is even better if it´s not too smooth. Divide the mixture into the paper molds, place hazelnuts on top and bake about 20 minutes or until they rise and golden brown.

No tinen ninguna complicación, y ....mmmm...¡merece la pena la espera!

lately in my kitchen...cinnamon rolls!

Rollitos de canela para desayunar...¡SÍ, POR FAVOR! Con lo que me gustan y nunca los había hecho en casa. Así que, cuando ojeando un librito de repostería me los he encontrado, no lo he dudado ni un segundo. A la cocina.
Cinnamon rolls for breakfast ... YES, PLEASE! I can´t believe I love them so much and had never made them at home. So, when flipping through a desserts book I have found them, I have not hesitated for a second. Go to the kitchen, girl.
Confieso que nunca sigo las recetas al pie de la letra, sobre todo cuando se trata de dulces. No soy la persona más golosa del mundo (aunque en este tema estoy haciendo serios progresos ;) ), así que acostumbro a poner menos azúcar de la que recomienden. Esta vez se podría decir que he improvisado mucho: la balanza de cocina se ha quedado sin pila, así que he medido todo a ojo. Creo que por eso han quedado más tipo bollito de pan. Ah, y he utilizado la mitad harina refinada y la otra mitad, integral, que es más saludable...jajaja, cuando veais los ingredientes os reiréis.
I must say I never follow recipes to the letter, especially when it comes to sweet stuff. I don´t have a sweet tooth (although I'm making serious progress in this issue ;) ) so I always add less sugar than a recipe recommends.This time you could say I´ve improvised a lot: the kitchen scale was out of battery, so I added the ingredients without measuring them. I think that's why they have turn out more like bread muffins. Oh, and I used half refined flour and half, wholemeal, which is healthier ... lol, when you see the ingredients you will laugh.
Ingredientes
Para la masa: 350g harina, 200ml  leche, 100g mantequilla derretida, 2 yemas de huevo, 2 cucharadas de azúcar, 2 cucharaditas de levadura, 1 cucharadita de canela y una pizca de sal
Para el relleno: 75g de azúcar moreno, 1 cucharada de mantequilla derretida, 1 cucharadita de canela
Para el glaseado: 50g de azúcar glass, 2 cucharadas de queso cremoso de untar, 1cucharada de mantequilla, 3 cucharadas de agua hirviendo
Ingredients
For the dough: 350g flour, 200ml milk, 100g melted butter, 2 egg yolks, 2 tablespoons sugar, 2 teaspoons baking powder, 1 teaspoon powdered cinnamon and a pinch of sal
For the filling: 75g brown sugar, 1 tablespoon melted butter, 1 teaspoon cinnamon
For glaze: 50g icing sugar, 2 tablespoons cream cheese , 1 tablespoon melted butter, 3 tablespoons boiling water



Y así se hacen:
Forra un molde redondo con papel vegetal. En un bol, mezcla la harina, la levadura, el azúcar, la canela y la sal. En otro bol, bate la leche, la mantequilla derretida y la yema. Mezcla las dos preparaciones hasta obtener una masa. Estira la masa sobre una superficie enharinada, haciendo un rectángulo, y enciende el horno a 180ºC para precalentar.
Prepara el relleno mezclando los ingredientes en un cuenco. Extiéndelo sobre la masa y enrolla como un brazo de gitano. Córtalo haciendo rodajas de unos 2-3 cm de grosor y colócalas en el molde (como en la primera foto). Hornea 30 minutos o hasta que veas que están doraditos.
Para el glaseado, tamiza el azúcar glass, añade el queso crema y la mantequilla ablandados, y el agua hirviendo. Mezcla todo bien y añade un poco más de agua si es necesario. Decora los rollitos con el glaseado, y listo.

Prepare the filling by mixing the ingredients in a bowl. Spread it over the dough and roll it into a Swiss roll. Cut slices about 2-3 cm thick and place into the mold (see first pic). Bake 30 minutes or until golden brown.
For the icing, sift the icing sugar, add cream cheese and softened butter, and boiling water. Mix well and add a little more water if necessary. Garnish rolls with glaze, and you are done!




Los puedes servir calientes o fríos, pero te aseguro que si los pruebas recién hechos, repetirás. Entre lo ricos que están y el aroma que dejan en toda la casa cuando los horneas...creo que no voy a tardar en hacer otra remesa. Bon appétit!
You can serve them warm or cold, but if you try them freshly baked, you will want more, I promise. They are SO delicious and it smells so good when you bake them...that I think I will not take too long to make another batch. Bon appétit!
